Uttam Sabji Masala (Stuffed Capsicum Paneer Bhurji)

Ingredients:
- 200g paneer, crumbled & Salt to taste.
- 1 onion & 1 tomato finely chopped.
- 2 green chillies, finely chopped.
- 1/2 tsp Swaaditi Jeera & Turmeric Powder.
- 1 tsp Swaaditi Spicy-Laal Chilli Powder.
- 2 tsp Swaaditi Uttam Sabji Masala.
- 4 whole large capsicums, seeds removed.
- Fresh coriander leaves for garnishing.
Instructions:
- Heat oil & add Swaaditi jeera, chopped onions, green chillies and chopped tomatoes.
- Add Swaaditi Turmeric, Spicy-Laal Chilli Powder, Swaaditi Uttam Sabji Masala and salt and mix these well.
- Add crumbled paneer and cook for a few minutes and stir to combine all the ingredients.
- Preheat your oven to 180°C (350°F).
- Stuff each of the hollowed-out capsicums with the prepared paneer bhurji.
- Place the stuffed capsicums in a baking dish, cover with aluminium foil, and bake for about 25-30 minutes.
- Remove from the oven, garnish with more fresh coriander leaves.
