Home-Style Kala Masala (Marathi Style Aloo Baingan Sabji)

Ingredients:
- 2 medium-sized potatoes & baingan chopped.
- 2 tsp oil, 1/2 tsp Swaaditi Jeera &1/2 tsp Rai.
- 1/2 tsp Swaaditi Turmeric & Coriander Powder.
- 3 tsp Swaaditi Spicy-Laal Chilli Powder.
- 1 tsp Swaaditi Home-Style Kala Masala.
- 2 tsp Swaaditi Dumdar Garam Masala.
- Salt to taste.
- Chopped fresh coriander leaves for garnishing.
Instructions:
- Heat the oil & add Swaaditi Rai & Jeera
- Add the cubed potatoes & baingan and mix it well. Add Swaaditi Turmeric, Spicy-Laal Chilli & Coriander powder along with salt.
- Swaaditi 2 tsp Home-Style Kala Masala.
- Cover the pan and cook on medium-low heat, stir occasionally until the potatoes and baigan are tender and cooked.
- Once the vegetables are cooked, garnish with fresh coriander leaves.
- Serve hot with roti/rice and dal as a delicious Marathi-Style Aloo Baigan Sabji.
